Texas Peach Cobbler


I'm a displaced Texan living the military life and every now and then (EVERYDAY) I miss Texas and all the yummy food from the Greatest State ever! Really, it is! ;)

There's a difference between Peach Cobbler and Texas Peach Cobbler. If you've ever been to a BBQ place in Texas, you'll know what I'm talking about. Usually, the menu will say, "Grandma's Homemade Peach Cobbler." That's when you know it's the REAL THANG! ha!

I've tried many recipes and this one is my favorite and as close to anything I've ever tasted in Texas. I should've asked for Grandma's phone number when I was in all of those BBQ restaurants and begged for her recipe.

So, here it goes:

Ingredients:
(filling)
1- 30oz can of sliced peaches, drained
1 tsp. vanilla
1 tsp. ground cinnamon
1 cup sugar
1 TBSP lemon juice

(batter)
1 cup flour
1 cup sugar
1 TBSP baking powder
1/2 tsp salt
1 cup milk
dash of cinnamon

plus, 1/2 cup butter, melted
(this is not put into the batter mixture)

Preheat oven to 375 degrees.


Cut up 1 stick of butter and melt (in microwave or on stove).
Haley helped me do this! I love the dirt under her nails even after she washed her hands!
The dirt is what makes this peach cobbler! I promise! ;)



Pour melted butter into a 13 X 9 baking pan.


In a medium-large size bowl add 1 cup flour, 1 cup sugar, 1 TBSP baking powder, dash of cinnamon and 1/2 tsp. salt.


Mix it all together!


Add 1 cup milk to the dry ingredients and mix! 
You want it to be a little clumpy!


Pour the mixture on top of the melted butter.
DO NOT STIR!

(If you're awesome, your batter and butter will form a heart like mine did! JUST KIDDING!)


In a large saucepan, add peaches, 1 tsp. vanilla, 1tsp. cinnamon, 1 TBSP lemon juice and 1 cup sugar.


Stir it all together and....


Bring it to a boil. Stir frequently.


Pour the peach mixture evenly over the batter and melted butter.
DO NOT STIR!


Bake at 375 degrees for 40 minutes, or until top is golden brown.


Let cool for a few minutes and serve with vanilla ice cream!
Then, eat all the servings you want! And be sure to lick your plate!
